Fiber-breaking enzymes are capable of hydrolyzing the nondigestible carbohydrates that comprise fiber. The human body does not produce enzymes to break down fiber, but instead is at the mercy of enzymes produced by intestinal microorganisms. While fiber is an important part of a healthy diet, it may also act as an anti-nutritive factor.

The food grade xylanase enzyme used in National Enzyme Company products is obtained by the controlled fermentation of Trichoderma longibrachiatum. This enzyme catalyzes the hydrolysis of 1,4 β-D-xylosidic linkages in xylans to produce D-xylose.


Currently, FCC compendial methods of analysis do not exist for this enzyme. The industry accepted unit of measure for this enzyme is the Xylanase unit (XU). 100 XU is defined as the amount of enzyme required to produce 1 mg of reducing sugar equivalent to xylose in one minute at 50° C and pH 5.3.


Xylanase has been used extensively in the baking industry to improve the consistency of baked goods by breaking down non-starch polysaccharides found in grains. Additional uses of xylanase include tea and coffee extraction and the improvement of animal feeds. In the dietary supplement industry, xylanase has been used as a digestive aid to improve the digestion and nutritional value of fibrous foods.

Shelf Life:

To maintain optimum enzyme activity, this product should be stored in a cool, dry place in a tightly sealed container. When properly stored, this product can be expected to lose less than 10% of its activity in twelve months.
