Pancreatin contains amylolytic, lipolytic, and proteolytic properties and therefore, is capable of converting starch into dextrins and sugar, hydrolyzing fats to glycerol and fatty acids, and changing protein into proteoses and smaller peptide chains.
This food grade enzyme system used in National Enzyme Company products is derived from porcine pancreas, and exhibits lipase, amylase and protease activities. This material is available in strengths of 5X, 8X and 10X.
The activity of 1X pancreatin includes 25 USP protease units, 25 USP amylase units and 2 USP lipase units per mg. 5X pancreatin is standardized to 5 times the activity of 1X pancreatin, 8X pancreatin is standardized to 8 times the activity of 1X pancreatin, and 10X pancreatin is standardized to 10 times the activity of 1X pancreatin. One USP unit of protease will liberate from casein an amount of soluble hydrosylate equivalent to 15nmol of L-tyrosine per minute, per the conditions of the assay. One USP unit of amylase will hydrolyze 0.16 uEq of the glycosidic bonds of starch per minute under the conditions of the assay. One USP unit of lipase will liberate 1.0 uEq of free fatty acids from olive oil per minute, under the conditions of the assay.
