Fiber-breaking enzymes are capable of hydrolyzing the nondigestible carbohydrates that comprise fiber. The human body does not produce enzymes to break down fiber, but instead is at the mercy of enzymes produced by intestinal microorganisms. While fiber is an important part of a healthy diet, it may also act as an anti-nutritive factor. Fiber may bind to minerals and other nutrients, blocking their bioavailability and preventing their absorption.
The pectinase enzyme used in National Enzyme Company products is a food grade enzyme complex obtained by the fermentation of Aspergillus niger. Pectinase is a mixture of pectin methylesterase, which demethylates pectin, and polygalacturonase, which hydrolyzes ą-D-1, 4-galacturonide.
Currently, there is not a published FCC unit of measure for pectinase. Throughout the industry, pectinase is measured in endo-PG units. One endo-PG unit is defined as the amount of enzyme that decreases 50 percent of substrate viscosity per minute at pH 3.5 and 40°C.
Agricultural use of pectinase includes processing of apples and pears. In the dietary supplement industry, pectinase is used as a digestive aid and to improve bioavailability of nutrients.
To maintain optimum enzyme activity, this product should be stored in a cool, dry place in a tightly sealed container. When properly stored, this product can be expected to lose less than 10% of its activity in twelve months.
